There's a new chain of pizza restaurants that's appeared in Nottingham (I'm sure it's everywhere), it's called Rudy's.
It's really good, it's basic, but the food's great and they have a format and the format works. It can't be perfect because it's gonna be in multiple locations all over the place, and by its very nature, it will have to be spread out and diverse.
Sat Bains' restaurant in Nottingham has two Michelin stars; it's not the same as Rudy's.
It’s not trying to spread out, and it's not trying to be simple; it's trying to be complicated, unbelievable and different from anywhere you've ever been before.
Choose your focus, breadth or depth.
Funnily enough, the same thing happens in life: you choose to have 1000 friends, you're unlikely to have one good one. If you have one good one, you spend too much time on them to have 1000.
